COLONIAL POUND CAKE


Nora Hickam, former President of Commissioner Charles Gause NO. 433 Chapter has
shared her famous Colonial Pound Cake Recipe with the readers of the 1812 blog. She recently
baked it for our February 1812 meeting at the current President Maytu Whittaker's  historic home in Winnabow.

OVEN  325 DEGREES
MIX 2 CUPS SUGAR AND ONE CUP OF  SOFTENED BUTTER (I use butter but can alter with oleo) UNTIL FLUFFY.  ADD 4 EGGS-ONE AT A TIME, MIXING WELL.  ADD ONE TEASPOON OF VANILLA AND ONE TEASPOON OF ORANGE OR LEMON EXTRACT; ADD ONE CUP OF ALL-PURPOSE FLOUR; ADD ONE-HALF CUP MILK;  ADD ANOTHER CUP OF FLOUR, MIXING WELL, BUT DO NOT BEAT HARD; THEN ADD ANOTHER HALF CUP OF MILK; MIX ONE CUP OF FLOUR AND  2 TEASPOONS OF BAKING POWDER THEN ADD TO MIXTURE. LIGHTLY BEAT UNTIL ALL FLOUR DISAPPEARS;
SPRAY PAM LIGHTLY ON 2 LOAF PANS AND LIGHTLY FLOUR; POUR CAKE MIXTURE INTO THESE TWO PANS  AND BAKE FOR ONE HOUR OR UNTIL BAKED. LEAVE IN PANS FOR 15 MINUTES THEN REMOVE.
